Ingredients
- 1 lb boneless, skinless chicken breasts, cooked and shredded
- 1 cup cooked black beans
- 1 cup corn kernels
- 1/2 cup diced tomatoes
- 1/4 cup diced red onion
- 1/4 cup chopped fresh cilantro
- 1/2 cup shredded cheddar cheese
- 1/4 cup sour cream
- 1/4 cup salsa
- 4 large flour tortillas
- Salt and pepper to taste
Instructions
- In a large bowl, combine the shredded chicken, black beans, corn, diced tomatoes, red onion, and cilantro.
- Season with salt and pepper to taste, and mix well to combine.
- Lay out the flour tortillas and divide the chicken mixture evenly among them, spreading it out in the center of each tortilla.
- Top each with shredded cheddar cheese, sour cream, and salsa.
- Fold in the sides of the tortillas and then roll them up tightly to form wraps.
- If desired, heat a large skillet over medium heat and lightly toast the wraps on all sides until the tortillas are golden brown and crispy, about 2-3 minutes per side.
- Slice the wraps in half diagonally and serve immediately. Enjoy!
