Ingredients
- 2 boneless, skinless chicken breasts, cooked and shredded
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels, fresh or frozen
- 1 red bell pepper, diced
- 1/2 red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 avocado, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup shredded cheddar cheese
- 1/4 cup sour cream
- 1/4 cup salsa
- 2 tablespoons lime juice
- 1 teaspoon cumin
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- 4 cups mixed salad greens
Instructions
- In a large bowl, combine the shredded chicken, black beans, corn, red bell pepper, red onion, cilantro, avocado, and cherry tomatoes.
- In a small bowl, mix together the sour cream, salsa, lime juice, cumin, and chili powder to make the dressing. Season with salt and pepper to taste.
- Pour the dressing over the chicken and vegetable mixture, and toss to coat evenly.
- Divide the mixed salad greens among 4 plates.
- Top each plate with the chicken and vegetable mixture.
- Sprinkle each plate with shredded cheddar cheese.
- Serve immediately and enjoy!
