Ingredients
- 2 cups masa harina
- 1 1/4 cups warm water
- 1/2 teaspoon salt
- 1 cup refried beans
- 1 cup shredded lettuce
- 1 cup crumbled queso fresco
- 1/2 cup Mexican crema
- 1/4 cup chopped fresh cilantro
- 1/4 cup diced red onion
- 1 avocado, diced
- 1 lime, cut into wedges
Instructions
- In a large bowl, mix 2 cups of masa harina with 1 1/4 cups of warm water and 1/2 teaspoon of salt to form a soft dough.
- Divide the dough into 12 equal portions and roll each portion into a ball.
- Using a tortilla press or your hands, flatten each ball into a 1/4 inch thick circle.
- Heat a skillet over medium-high heat and cook each sopito for 2-3 minutes on each side, until lightly browned and puffed.
- Spread a spoonful of refried beans on top of each sopito.
- Top with shredded lettuce, crumbled queso fresco, Mexican crema, chopped cilantro, diced red onion, and diced avocado.
- Serve the sopitos with lime wedges on the side.
