Ingredients
- 1 lb beef stew meat, cut into small pieces
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 potatoes, diced
- 1 zucchini, sliced
- 1 cup corn kernels
- 1 cup green beans, cut into 1-inch pieces
- 1 tomato, chopped
- 1/4 cup cilantro, chopped
- 8 cups beef broth
- 1 teaspoon cumin
- 1 teaspoon oregano
- Salt and pepper to taste
- 2 tablespoons vegetable oil
Instructions
- In a large pot, heat 2 tablespoons of vegetable oil over medium-high heat.
- Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Add the beef stew meat to the pot and brown on all sides, about 5 minutes.
- Pour in the beef broth and bring to a boil.
- Reduce the heat to low and simmer for 1 hour, or until the beef is tender.
- Add the carrots, potatoes, zucchini, corn, green beans, and tomato to the pot.
- Season with cumin, oregano, salt, and pepper.
- Simmer for an additional 30 minutes, or until the vegetables are tender.
- Stir in the chopped cilantro and adjust seasoning if necessary.
- Serve hot and enjoy!
