  • 1/2 teaspoon of cayenne pepper

Instructions

  • Prepare the smoker according to manufacturer's instructions and preheat to 250°F.
  • Rinse the chicken and pat dry with paper towels. Place the chicken on a cutting board breast side up.
  • In a small bowl, mix 1/4 cup of olive oil, 2 tablespoons of smoked paprika, 2 teaspoons of garlic powder, 2 teaspoons of onion powder, 1 teaspoon of salt, 1 teaspoon of black pepper, and 1/2 teaspoon of cayenne pepper to create a spice rub.
  • Rub the spice mixture all over the chicken, including under the skin and inside the cavity. Place the lemon slices inside the cavity of the chicken.
  • Once the smoker is ready, place the chicken on the smoker rack breast side up. Close the lid and smoke for 3-4 hours, or until the internal temperature of the thickest part of the chicken reaches 165°F.
  • Remove the chicken from the smoker and let it rest for 10-15 minutes before carving.
  • Garnish with fresh herbs and serve the smoked chicken on a platter. Enjoy!
