Smoked Chicken Platter

Ingredients
- 1 whole chicken (about 4-5 lbs)
- 1/4 cup of olive oil
- 2 tablespoons of smoked paprika
- 2 teaspoons of garlic powder
- 2 teaspoons of onion powder
- 1 teaspoon of salt
- 1 teaspoon of black pepper
- 1/2 teaspoon of cayenne pepper
- 1 lemon, sliced
- Fresh herbs (rosemary, thyme) for garnish
Instructions
- Prepare the smoker according to manufacturer's instructions and preheat to 250°F.
- Rinse the chicken and pat dry with paper towels. Place the chicken on a cutting board breast side up.
- In a small bowl, mix 1/4 cup of olive oil, 2 tablespoons of smoked paprika, 2 teaspoons of garlic powder, 2 teaspoons of onion powder, 1 teaspoon of salt, 1 teaspoon of black pepper, and 1/2 teaspoon of cayenne pepper to create a spice rub.
- Rub the spice mixture all over the chicken, including under the skin and inside the cavity. Place the lemon slices inside the cavity of the chicken.
- Once the smoker is ready, place the chicken on the smoker rack breast side up. Close the lid and smoke for 3-4 hours, or until the internal temperature of the thickest part of the chicken reaches 165°F.
- Remove the chicken from the smoker and let it rest for 10-15 minutes before carving.
- Garnish with fresh herbs and serve the smoked chicken on a platter. Enjoy!
