Ingredients
- 4 bone-in, skin-on chicken thighs
- 1 cup of your favorite BBQ sauce
- 2 chipotle peppers in adobo sauce, minced
- 2 tablespoons of honey
- 1 teaspoon of smoked paprika
- 1/2 teaspoon of garlic powder
- 1/2 teaspoon of onion powder
- Salt and pepper to taste
- 2 pounds of potatoes, peeled and cubed
- 4 cloves of garlic, minced
- 1/2 cup of milk
- 4 tablespoons of butter
- Salt and pepper to taste
Instructions
- Preheat your smoker to 275°F.
- Season the chicken thighs with salt and pepper.
- Place the chicken thighs in the smoker and cook for 1 hour, or until the internal temperature reaches 165°F.
- In a small saucepan, combine the BBQ sauce, minced chipotle peppers, honey, smoked paprika, garlic powder, and onion powder. Simmer for 10 minutes, then remove from heat.
- Brush the smoked chicken thighs with the spicy chipotle glaze and return to the smoker for an additional 10 minutes to set the glaze.
- While the chicken is smoking, place the potatoes and minced garlic in a large pot and cover with water. Bring to a boil and cook until the potatoes are fork-tender, about 15-20 minutes.
- Drain the potatoes and garlic, then return them to the pot. Add the milk, butter, salt, and pepper. Mash until smooth and creamy.
- Serve the smoked BBQ chicken with a side of garlic mashed potatoes and enjoy!
