Ingredients
- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces

- 1 red bell pepper, chopped
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (28 oz) diced tomatoes
- 1 can (6 oz) tomato paste
- 2 cups chicken broth
- 2 cloves garlic, minced
- 2 tbsp chili powder
- 1 tbsp cumin
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, chopped cilantro, sliced avocado
Instructions
- In a slow cooker, combine the chicken, onion, red bell pepper, black beans, kidney beans, corn, diced tomatoes, tomato paste, chicken broth, garlic, chili powder, cumin, paprika, and cayenne pepper.
- Stir to combine all ingredients.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through and flavors are well blended.
- Season with salt and pepper to taste.
