Ingredients
- 1.5 lbs boneless, skinless chicken thighs
- 1 cup brown rice
- 1 onion, diced
- 1 red bell pepper, diced
- 1 can (14 oz) diced tomatoes
- 1 can (4 oz) diced green chilies
- 2 cups chicken broth
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp cayenne pepper
- 1/2 tsp paprika
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a slow cooker, combine 1.5 lbs of boneless, skinless chicken thighs, 1 cup of brown rice, 1 diced onion, 1 diced red bell pepper, 1 can of diced tomatoes, 1 can of diced green chilies, 2 cups of chicken broth, 1 tsp of cumin, 1 tsp of chili powder, 1/2 tsp of cayenne pepper, 1/2 tsp of paprika, and salt and pepper to taste.
- Stir to combine all ingredients.
- Cover and cook on low for 4 hours, or until the chicken is cooked through and the rice is tender.
- Once cooked, shred the chicken using two forks and mix it back into the rice mixture.
- Serve the spicy slow cooker chicken and brown rice garnished with fresh cilantro. Enjoy!
