Ingredients
- 1 pound green beans, trimmed
- 2 tablespoons vegetable oil
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 tablespoons Sichuan peppercorns
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sugar
- 1 teaspoon chili flakes
- 1 teaspoon sesame oil
- Salt to taste
Instructions
- Blanch the green beans in a pot of boiling water for 2 minutes, then transfer to a bowl of ice water to stop the cooking process. Drain and set aside.
- In a large pan or wok, heat the vegetable oil over medium-high heat. Add the garlic, ginger, and Sichuan peppercorns, and stir-fry for 1-2 minutes until fragrant.
- Add the blanched green beans to the pan and stir-fry for 3-4 minutes until they are tender-crisp.
- In a small bowl, mix together the soy sauce, rice vinegar, sugar, chili flakes, and sesame oil. Pour this sauce over the green beans and toss to coat evenly. Cook for an additional 1-2 minutes.
- Season with salt to taste and remove from heat.
- Transfer the Sichuan spicy green beans to a serving dish and serve hot as a side dish or with steamed rice as a main dish. Enjoy!
