  • 1/4 cup chopped peanuts
  • 1/4 cup hoisin sauce
  • 1/4 cup peanut sauce
  • Warm water for soaking rice paper wrappers

Instructions

  • Prepare all the ingredients and have them ready for assembly.
  • Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for a few seconds to soften.
  • Place the softened rice paper wrapper onto a clean, damp kitchen towel.
  • In the center of the wrapper, layer 2 shrimp, a few slices of mango, a small handful of vermicelli noodles, lettuce, cilantro, mint, and a sprinkle of chopped peanuts.
  • Fold the sides of the wrapper over the filling, then tightly roll it up, similar to a burrito. Repeat with the remaining ingredients.
