Ingredients
- 1 pound of shrimp, peeled and deveined
- 1 tablespoon of olive oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, sliced
- 2 cloves of garlic, minced
- 1 teaspoon of chili powder
- 1 teaspoon of cumin
- 1/2 teaspoon of paprika
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1 head of iceberg lettuce, leaves separated
- 1 avocado, sliced
- 1/4 cup of fresh cilantro, chopped
- 1 lime, cut into wedges
Instructions
- In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
- Add the sliced bell peppers and onion to the skillet and cook for 3-4 minutes, until slightly softened.
- Add the minced garlic, chili powder, cumin, paprika, salt, and black pepper to the skillet and cook for an additional 1-2 minutes, until fragrant.
- Push the vegetables to one side of the skillet and add the shrimp to the other side. Cook for 2-3 minutes per side, until the shrimp is pink and opaque.
- Remove the skillet from the heat and assemble the lettuce wraps by placing a spoonful of the shrimp and vegetable mixture onto each lettuce leaf.
- Top with sliced avocado and chopped cilantro, and serve with lime wedges on the side.
