Garlic Butter Shrimp and Zucchini Skewers

Ingredients
- 1 pound large shrimp, peeled and deveined
- 2 medium zucchinis, sliced into rounds
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup unsalted butter
- 4 cloves garlic, minced
- 1 tablespoon chopped fresh parsley
- 1/2 teaspoon red pepper flakes
Instructions
- In a small bowl, combine olive oil, lemon juice, 2 cloves of minced garlic, paprika, salt, and black pepper. Mix well.
- Thread the shrimp and zucchini rounds onto skewers, alternating between the two. Place the skewers in a shallow dish and brush with the olive oil mixture. Let marinate for 10 minutes.
- Preheat the grill or grill pan over medium-high heat. Place the skewers on the grill and cook for 2-3 minutes per side, or until the shrimp is pink and opaque. Remove from the grill and set aside.
- In a small saucepan, melt the butter over medium heat. Add the remaining 4 cloves of minced garlic and cook for 1-2 minutes, or until fragrant. Stir in the chopped parsley and red pepper flakes. Remove from heat.
- Serve the shrimp and zucchini skewers with the garlic butter dipping sauce on the side. Enjoy!
