Instructions

  • In a small bowl, combine olive oil, lemon juice, 2 cloves of minced garlic, paprika, salt, and black pepper. Mix well.
  • Thread the shrimp and zucchini rounds onto skewers, alternating between the two. Place the skewers in a shallow dish and brush with the olive oil mixture. Let marinate for 10 minutes.
  • Preheat the grill or grill pan over medium-high heat. Place the skewers on the grill and cook for 2-3 minutes per side, or until the shrimp is pink and opaque. Remove from the grill and set aside.
  • In a small saucepan, melt the butter over medium heat. Add the remaining 4 cloves of minced garlic and cook for 1-2 minutes, or until fragrant. Stir in the chopped parsley and red pepper flakes. Remove from heat.
