Garlic Butter Shrimp and Zucchini Skewers
Created by: Howcan Team
Ingredients
- 1 pound large shrimp, peeled and deveined
- 2 medium zucchinis, sliced into rounds
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup unsalted butter
- 4 cloves garlic, minced
- 1 tablespoon chopped fresh parsley
- 1/2 teaspoon red pepper flakes
Instructions
- In a small bowl, combine olive oil, lemon juice, 2 cloves of minced garlic, paprika, salt, and black pepper. Mix well.
- Thread the shrimp and zucchini rounds onto skewers, alternating between the two. Place the skewers in a shallow dish and brush with the olive oil mixture. Let marinate for 10 minutes.
- Preheat the grill or grill pan over medium-high heat. Place the skewers on the grill and cook for 2-3 minutes per side, or until the shrimp is pink and opaque. Remove from the grill and set aside.
- In a small saucepan, melt the butter over medium heat. Add the remaining 4 cloves of minced garlic and cook for 1-2 minutes, or until fragrant. Stir in the chopped parsley and red pepper flakes. Remove from heat.
- Serve the shrimp and zucchini skewers with the garlic butter dipping sauce on the side. Enjoy!
Shrimp and Zucchini Skewers have a rich history, originating from the Mediterranean region where fresh seafood and vegetables are abundant. This dish has been perfected by chefs in coastal towns, where the aroma of sizzling skewers fills the air. The key to this dish is the perfect balance of flavors - succulent shrimp, tender zucchini, and a burst of garlic butter. The extra garlic butter dipping sauce takes this dish to the next level, adding a creamy and savory element that complements the charred flavors of the skewers. For the best version of this dish, head to seaside restaurants in Greece or Italy, where the freshest ingredients make all the difference. To make it at home, ensure the shrimp is perfectly seasoned and the zucchini is grilled to perfection. This dish is a crowd-pleaser and a must-try for seafood lovers.
