  • 1/2 cup of mayonnaise
  • 2 chipotle peppers in adobo sauce, minced
  • 1 tablespoon of adobo sauce
  • 1 clove of garlic, minced
  • 1 tablespoon of lime juice
  • 1/2 teaspoon of cumin
  • 1/4 teaspoon of paprika
  • 1/4 teaspoon of black pepper
  • Vegetable oil for frying

  • 1 tablespoon of lime juice
  • 1/2 teaspoon of cumin
  • 1/4 teaspoon of paprika
  • 1/4 teaspoon of black pepper
  • Vegetable oil for frying

Instructions

  • In a large bowl, mix 2 cups of masarepa with 2 1/2 cups of warm water and 1 teaspoon of salt. Knead the mixture until it forms a smooth dough. Divide the dough into 8 equal portions and shape them into thick discs.
  • Heat a non-stick skillet over medium heat and cook the arepas for 5-6 minutes on each side, or until golden brown. Transfer to a baking sheet and bake in a preheated oven at 350°F for 15-20 minutes, or until they sound hollow when tapped.
  • In a small bowl, combine 1/2 cup of mayonnaise, 2 minced chipotle peppers, 1 tablespoon of adobo sauce, 1 minced garlic clove, 1 tablespoon of lime juice, 1/2 teaspoon of cumin, 1/4 teaspoon of paprika, and 1/4 teaspoon of black pepper. Mix well to make the spicy chipotle aioli.
  • Once the arepas are baked, slice them in half and fill each with a generous amount of shredded beef and mozzarella cheese. Place them back in the oven for a few minutes to melt the cheese.
  • Serve the shredded beef and cheese arepas hot, topped with a dollop of spicy chipotle aioli. Enjoy!
