Instructions

  • In a large bowl, mix 2 cups of pre-cooked shredded beef with 1 cup of shredded mozzarella cheese. Set aside.
  • In a separate bowl, combine 2 cups of pre-cooked cornmeal with 2 1/2 cups of warm water and 1 teaspoon of salt. Knead the mixture until a smooth dough forms.
  • Divide the dough into 8 equal portions and shape each portion into a ball. Flatten each ball to form a patty about 1/2 inch thick.
  • Heat 1 tablespoon of vegetable oil in a non-stick skillet over medium heat. Cook the arepas for 5-6 minutes on each side, or until golden brown and crispy. Repeat with the remaining arepas, adding more oil as needed.
  • In the same skillet, heat the remaining 1 tablespoon of vegetable oil over medium heat. Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, about 3 minutes.
  • To assemble, slice each arepa in half and fill with the shredded beef and cheese mixture. Top each arepa with a fried egg and serve immediately.
