Sesame Tofu with Broccoli

Ingredients
- 1 block of firm tofu, drained and cut into cubes
- 2 cups of broccoli florets
- 2 tablespoons of sesame oil
- 3 tablespoons of soy sauce
- 2 tablespoons of rice vinegar
- 2 tablespoons of maple syrup
- 1 tablespoon of cornstarch
- 1 teaspoon of minced garlic
- 1 teaspoon of grated ginger
- 1/4 cup of water
- 2 tablespoons of sesame seeds
- Cooked rice, for serving
Instructions
- In a small bowl, whisk together 2 tablespoons of soy sauce, 2 tablespoons of rice vinegar, 2 tablespoons of maple syrup, 1 tablespoon of cornstarch, and 1/4 cup of water. Set aside.
- Heat 1 tablespoon of sesame oil in a large skillet over medium heat. Add the tofu cubes and cook until golden and crispy on all sides, about 8-10 minutes. Remove the tofu from the skillet and set aside.
- In the same skillet, add the remaining 1 tablespoon of sesame oil. Add 1 teaspoon of minced garlic and 1 teaspoon of grated ginger, and cook for 1-2 minutes until fragrant.
- Add 2 cups of broccoli florets to the skillet and stir-fry for 3-4 minutes until tender-crisp.
- Pour the soy sauce mixture into the skillet with the broccoli. Cook, stirring constantly, until the sauce thickens and coats the broccoli, about 2-3 minutes.
- Return the crispy tofu to the skillet and toss to coat with the sauce.
- Sprinkle 2 tablespoons of sesame seeds over the tofu and broccoli.
- Serve the sesame tofu and broccoli over cooked rice. Enjoy!
