Sesame Tofu with Bok Choy

Ingredients
- 1 block of firm tofu, drained and cut into cubes
- 2 tablespoons of cornstarch
- 2 tablespoons of sesame oil
- 4 cloves of garlic, minced
- 1 tablespoon of fresh ginger, grated
- 4 heads of baby bok choy, halved
- 1/4 cup of soy sauce
- 2 tablespoons of rice vinegar
- 2 tablespoons of brown sugar
- 1 tablespoon of sesame seeds
- 2 green onions, chopped
- Cooked rice, for serving
Instructions
- In a large bowl, toss the tofu cubes with 2 tablespoons of cornstarch until evenly coated.
- Heat 1 tablespoon of sesame oil in a large skillet over medium-high heat. Add the tofu cubes and cook until golden and crispy, about 5-7 minutes. Remove the tofu from the skillet and set aside.
- In the same skillet, add the remaining 1 tablespoon of sesame oil. Add the minced garlic and grated ginger, and cook for 1-2 minutes until fragrant.
- Add the halved bok choy to the skillet and cook for 3-4 minutes until slightly wilted.
- In a small bowl, whisk together 1/4 cup of soy sauce, 2 tablespoons of rice vinegar, and 2 tablespoons of brown sugar. Pour the sauce over the bok choy and cook for an additional 2-3 minutes.
- Return the crispy tofu to the skillet and toss everything together until well coated in the sauce.
- Sprinkle with 1 tablespoon of sesame seeds and chopped green onions.
- Serve the sesame tofu and bok choy over cooked rice. Enjoy!
