Sesame Noodle Salad

Ingredients
- 8 oz of soba noodles
- 1/4 cup of soy sauce
- 2 tbsp of sesame oil
- 2 tbsp of rice vinegar
- 1 tbsp of honey
- 1 clove of garlic, minced
- 1 tsp of grated ginger
- 1/2 cup of shredded carrots
- 1/2 cup of sliced cucumber
- 1/4 cup of chopped scallions
- 2 tbsp of sesame seeds
- Salt and pepper to taste
Instructions
- Cook the soba noodles according to the package instructions. Drain and rinse with cold water. Set aside.
- In a small bowl, whisk together 1/4 cup of soy sauce, 2 tbsp of sesame oil, 2 tbsp of rice vinegar, 1 tbsp of honey, 1 clove of minced garlic, and 1 tsp of grated ginger to make the dressing.
- In a large bowl, combine the cooked soba noodles, shredded carrots, sliced cucumber, and chopped scallions.
- Pour the dressing over the noodle mixture and toss to coat evenly.
- Season with salt and pepper to taste, and sprinkle with 2 tbsp of sesame seeds.
- Chill the salad in the refrigerator for at least 30 minutes before serving.
- Serve the sesame noodle salad chilled and enjoy!
