  • 1/2 cup of shredded carrots
  • 1/2 cup of sliced cucumber
  • 1/4 cup of chopped scallions
  • 2 tbsp of sesame seeds
  • Salt and pepper to taste

Instructions

  • Cook the soba noodles according to the package instructions. Drain and rinse with cold water. Set aside.
  • In a small bowl, whisk together 1/4 cup of soy sauce, 2 tbsp of sesame oil, 2 tbsp of rice vinegar, 1 tbsp of honey, 1 clove of minced garlic, and 1 tsp of grated ginger to make the dressing.
  • In a large bowl, combine the cooked soba noodles, shredded carrots, sliced cucumber, and chopped scallions.
  • Pour the dressing over the noodle mixture and toss to coat evenly.
  • Season with salt and pepper to taste, and sprinkle with 2 tbsp of sesame seeds.
  • Chill the salad in the refrigerator for at least 30 minutes before serving.
  • Serve the sesame noodle salad chilled and enjoy!
