  • 1 block (14 oz) of firm tofu, drained and cubed
  • 2 tablespoons of sesame oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup of broccoli florets
  • 1 cup of snap peas
  • 3 green onions, chopped
  • 1 tablespoon of grated ginger
  • 3 cloves of garlic, minced
  • 1/4 cup of soy sauce
  • 2 tablespoons of rice vinegar
  • 2 tablespoons of honey
  • 1 tablespoon of cornstarch
  • 1/4 cup of water
  • 2 tablespoons of sesame seeds
  • Cooked rice or noodles, for serving

Instructions

  • In a large non-stick skillet, heat 1 tablespoon of sesame oil over medium-high heat.
  • Add the cubed tofu to the skillet and cook for 5-7 minutes, stirring occasionally, until golden brown. Remove the tofu from the skillet and set aside.
  • In the same skillet, add the remaining 1 tablespoon of sesame oil. Add the red and yellow bell peppers, broccoli, and snap peas. Cook for 3-4 minutes, until the vegetables are tender-crisp.
  • Add the green onions, grated ginger, and minced garlic to the skillet. Cook for 1-2 minutes, stirring constantly, until fragrant.
  • In a small bowl, whisk together the soy sauce, rice vinegar, honey, cornstarch, and water. Pour the sauce into the skillet with the vegetables. Cook for 1-2 minutes, until the sauce thickens.
  • Add the cooked tofu back to the skillet and toss to coat with the sauce and vegetables. Cook for an additional 1-2 minutes to heat through.
  • Sprinkle the sesame seeds over the tofu and vegetables. Serve the sesame ginger tofu stir-fry over cooked rice or noodles. Enjoy!
