Sesame Ginger Tofu Stir-Fry with Broccoli and Carrots

Ingredients
- 1 block (14 oz) of firm tofu, drained and cubed
- 2 cups of broccoli florets
- 1 cup of sliced carrots
- 3 tablespoons of soy sauce
- 2 tablespoons of sesame oil
- 2 tablespoons of rice vinegar
- 2 tablespoons of honey
- 1 tablespoon of grated ginger
- 2 cloves of garlic, minced
- 1 tablespoon of cornstarch
- 2 tablespoons of water
- 2 tablespoons of vegetable oil
- 1 teaspoon of sesame seeds
- Salt and pepper to taste
Instructions
- In a small bowl, whisk together 3 tablespoons of soy sauce, 2 tablespoons of sesame oil, 2 tablespoons of rice vinegar, 2 tablespoons of honey, grated ginger, and minced garlic. Set aside.
- In another small bowl, mix together 1 tablespoon of cornstarch and 2 tablespoons of water to make a slurry. Set aside.
- Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. Add the cubed tofu and cook until golden brown on all sides, about 5-7 minutes. Remove the tofu from the skillet and set aside.
- In the same skillet, add the broccoli and carrots. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
- Return the tofu to the skillet with the vegetables. Pour the sesame ginger sauce over the tofu and vegetables. Stir in the cornstarch slurry. Cook for 1-2 minutes until the sauce thickens and coats the tofu and vegetables.
- Season with salt and pepper to taste. Sprinkle with sesame seeds before serving.
