Ingredients
- 1 pound of seitan, sliced into 1/4 inch thick pieces
- 1/2 cup of all-purpose flour
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 2 tablespoons of olive oil
- 1/2 cup of vegetable broth
- 1/4 cup of white wine
- 2 tablespoons of lemon juice
- 2 tablespoons of capers
- 2 tablespoons of chopped fresh parsley
Instructions
- In a shallow dish, combine 1/2 cup of flour, 1 teaspoon of salt, and 1/2 teaspoon of black pepper.
- Dredge the seitan slices in the flour mixture, shaking off any excess.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
- Add the seitan slices to the skillet and cook for 2-3 minutes on each side, or until golden brown.
- Remove the seitan from the skillet and set aside.
- In the same skillet, add 1/2 cup of vegetable broth, 1/4 cup of white wine, and 2 tablespoons of lemon juice. Bring to a simmer, scraping up any browned bits from the bottom of the skillet.
- Return the seitan to the skillet and simmer for 5 minutes, or until the sauce has thickened slightly.
- Stir in 2 tablespoons of capers and cook for an additional 2 minutes.
- Sprinkle with 2 tablespoons of chopped fresh parsley before serving.
