Seitan Banh Mi Sandwich

Ingredients
- 1 pound of seitan, sliced
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 2 tablespoons maple syrup
- 1 teaspoon sesame oil
- 1 baguette, cut into 4 equal pieces and split lengthwise
- 1/2 cup vegan mayonnaise
- 1 cup pickled vegetables (carrots, daikon radish, and cucumber)
- 1 jalapeno, thinly sliced
- 1/2 cup fresh cilantro leaves
- 1/4 cup fresh mint leaves
- 1/4 cup fresh basil leaves
- 1 tablespoon vegetable oil
Instructions
- In a bowl, whisk together 1/4 cup soy sauce, 2 tablespoons rice vinegar, 2 tablespoons maple syrup, and 1 teaspoon sesame oil. Add the sliced seitan and marinate for 20 minutes.
- Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Add the marinated seitan and cook for 3-4 minutes on each side, until browned and crispy. Remove from heat and set aside.
- Spread 2 tablespoons of vegan mayonnaise on the bottom half of each baguette piece.
- Divide the cooked seitan among the 4 baguette pieces, placing it on top of the vegan mayonnaise.
- Top the seitan with pickled vegetables, sliced jalapeno, cilantro, mint, and basil leaves.
- Close the sandwiches with the top half of the baguette and serve immediately.
