Instructions

  • In a small bowl, whisk together 1/4 cup honey and 2 tablespoons Dijon mustard to make the glaze.
  • Season the salmon fillets with salt and pepper.
  • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
  • Place the salmon fillets in the skillet, skin side down, and cook for 3-4 minutes until the skin is crispy and the salmon is seared.
  • Flip the salmon fillets and brush the honey mustard glaze on top.
  • Cook for an additional 3-4 minutes, or until the salmon is cooked to your desired level of doneness and the glaze is caramelized.
  • In a large bowl, toss together 8 cups of mixed salad greens, 1 cup of halved cherry tomatoes, and 1/2 thinly sliced red onion.
  • Divide the salad mixture onto 4 plates.
  • Place a seared salmon fillet on top of each salad.
  • Drizzle 1/4 cup of balsamic vinaigrette over the salads.
  • Serve immediately and enjoy!
