Ingredients
- 4 salmon fillets (6 oz each)
- 1/4 cup honey
- 2 tablespoons Dijon mustard
- 2 tablespoons olive oil
- Salt and pepper to taste
- 8 cups mixed salad greens
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/4 cup balsamic vinaigrette
Instructions
- In a small bowl, whisk together 1/4 cup honey and 2 tablespoons Dijon mustard to make the glaze.
- Season the salmon fillets with salt and pepper.
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
- Place the salmon fillets in the skillet, skin side down, and cook for 3-4 minutes until the skin is crispy and the salmon is seared.
- Flip the salmon fillets and brush the honey mustard glaze on top.
- Cook for an additional 3-4 minutes, or until the salmon is cooked to your desired level of doneness and the glaze is caramelized.
- In a large bowl, toss together 8 cups of mixed salad greens, 1 cup of halved cherry tomatoes, and 1/2 thinly sliced red onion.
- Divide the salad mixture onto 4 plates.
- Place a seared salmon fillet on top of each salad.
- Drizzle 1/4 cup of balsamic vinaigrette over the salads.
- Serve immediately and enjoy!
