  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • In a large bowl, combine 1 lb ground pork sausage, 1/2 cup breadcrumbs, 1/4 cup finely chopped onion, 1/4 cup finely chopped parsley, 1/2 teaspoon garlic powder, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Mix until well combined.
  • Roll out the puff pastry on a lightly floured surface. Cut the pastry into 12 equal rectangles.
  • Divide the sausage mixture into 12 portions. Shape each portion into a log and place it on a puff pastry rectangle. Roll up the pastry around the sausage, sealing the edges.
  • Wrap each sausage roll with a slice of bacon, tucking the ends underneath the roll. Place the rolls seam-side down on the prepared baking sheet.
