Instructions

  • In a large pot, cook the Italian sausage over medium heat, breaking it into small pieces with a spoon, until browned and cooked through, about 8-10 minutes.
  • Add the chopped onion and minced garlic to the pot and cook for an additional 3-4 minutes until the onion is softened.
  • Pour in the chicken broth and add the diced potatoes. Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes, or until the potatoes are tender.
  • Stir in the heavy cream and chopped kale, and let the soup simmer for another 5 minutes until the kale is wilted and the soup is heated through.
  • Season the soup with salt and pepper to taste, and add red pepper flakes if desired for a bit of heat.
