- 1 lb of Italian sausage, casings removed
- 1 onion, chopped
- 3 cloves of garlic, minced
- 4 cups of chicken broth
- 4 cups of potatoes, peeled and diced
- 1 cup of heavy cream
- 2 cups of kale, chopped
- Salt and pepper to taste
- 1/4 teaspoon of red pepper flakes (optional)
Instructions
- In a large pot, cook the Italian sausage over medium heat, breaking it into small pieces with a spoon, until browned and cooked through, about 8-10 minutes.
- Add the chopped onion and minced garlic to the pot and cook for an additional 3-4 minutes until the onion is softened.
- Pour in the chicken broth and add the diced potatoes. Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes, or until the potatoes are tender.
- Stir in the heavy cream and chopped kale, and let the soup simmer for another 5 minutes until the kale is wilted and the soup is heated through.
