Instructions

  • Add the sliced Italian sausage and cook until browned, about 5 minutes. Remove from the skillet and set aside.
  • In the same skillet, add the remaining 1 tablespoon of olive oil and sauté the sliced bell peppers and onion until they begin to soften, about 5 minutes.
  • Add the minced garlic and cook for an additional 1 minute.
  • Stir in the rice and cook for 2 minutes, stirring constantly.
  • Pour in the chicken broth, diced tomatoes, Italian seasoning, salt, and pepper. Bring to a boil.
  • Reduce the heat to low, cover, and simmer for 20 minutes, or until the rice is tender and the liquid is absorbed.
  • Stir in the cooked Italian sausage and heat through, about 2 minutes.
  • Serve the sausage and peppers over the rice and enjoy!
