Ingredients
- 1 pound ground beef
- 1 onion, chopped
- 1 green bell pepper, chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (4 oz) diced green chilies
- 4 cups beef broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon oregano
- Salt and pepper to taste
- 1/4 cup chopped fresh cilantro
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- Tortilla chips for serving
Instructions
- In a large pot, brown 1 pound of ground beef over medium heat. Drain excess fat.
- Add chopped onion, green bell pepper, and minced garlic to the pot. Cook until vegetables are tender.
- Stir in diced tomatoes, black beans, corn, diced green chilies, beef broth, cumin, chili powder, oregano, salt, and pepper.
- Bring the soup to a boil, then reduce heat and let it simmer for 20 minutes.
- Taste and adjust seasoning as needed.
- Serve the soup hot, garnished with chopped cilantro, shredded cheddar cheese, a dollop of sour cream, and tortilla chips on the side.
