Instructions

  • Cut the red bell peppers in half and remove the seeds and membranes. Place the pepper halves, skin side up, on a baking sheet lined with aluminum foil.
  • Broil the peppers for 10-12 minutes, or until the skins are charred and blistered. Remove from the oven and immediately cover the peppers with the aluminum foil. Let them steam for 10 minutes.
  • Peel off the charred skins from the peppers and chop the flesh into small pieces.
  • In a food processor, combine the chopped roasted red peppers, crumbled feta cheese, Greek yogurt, minced garlic, olive oil, lemon juice, and cayenne pepper. Blend until smooth and creamy.
