Instructions

  • Preheat the oven to 400°F (200°C).
  • In a large bowl, toss 1 pound of sliced mushrooms with 2 tablespoons of olive oil, 1 teaspoon of garlic powder, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper until well coated.
  • Spread the seasoned mushrooms in a single layer on a baking sheet and roast in the preheated oven for 20 minutes, or until golden brown and tender, stirring once halfway through.
  • While the mushrooms are roasting, cook 6 slices of chopped bacon in a skillet over medium heat until crispy. Remove the bacon from the skillet and place on a paper towel-lined plate to drain excess grease.
  • In the same skillet with the bacon drippings, crack 4 eggs and cook to your desired doneness (fried, scrambled, or poached).
  • Once the mushrooms are done roasting, remove them from the oven and transfer to a serving platter. Top with the cooked bacon and eggs.
  • Garnish with 2 tablespoons of chopped fresh parsley and serve immediately. Enjoy!
