Instructions

  • Preheat the oven to 400°F (200°C).
  • Cut the top off the head of garlic to expose the cloves. Drizzle with a little olive oil, wrap in foil, and roast for 30 minutes, or until the cloves are soft and golden brown. Allow to cool.
  • Cut the avocados in half, remove the pits, and scoop the flesh into a mixing bowl.
  • Squeeze the juice of the lime over the avocados to prevent browning.
  • Add the roasted garlic cloves to the bowl and mash with a fork until smooth.
  • Stir in the diced red onion, chopped cilantro, minced jalapeno, and cumin. Mix well to combine.
  • Season with salt and pepper to taste.
  • Cover the guacamole with plastic wrap, pressing it directly onto the surface to prevent air exposure, and refrigerate for at least 30 minutes to allow the flavors to meld.
