Ingredients
- 1 cup of rice
- 2 cups of water
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1/4 teaspoon of garlic powder
- 1/4 cup of diced bell peppers
- 1/4 cup of diced onions
- 1/4 cup of frozen peas
- 1/4 cup of shredded cheese
- 1/4 cup of bread crumbs
Instructions
- In a medium saucepan, bring 2 cups of water to a boil.
- Add 1 cup of rice and 1/2 teaspoon of salt to the boiling water.
- Reduce the heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and the water is absorbed.
- In a separate skillet, sauté 1/4 cup of diced bell peppers, 1/4 cup of diced onions, and 1/4 cup of frozen peas until they are tender.
- Season the sautéed vegetables with 1/4 teaspoon of black pepper and 1/4 teaspoon of garlic powder.
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the cooked rice and sautéed vegetables.
- Divide the rice mixture evenly into 4 greased muffin cups.
- Top each rice cup with 1 tablespoon of shredded cheese and 1 tablespoon of bread crumbs.
- Bake for 15-20 minutes, or until the cheese is melted and the bread crumbs are golden brown.
- Allow the rice cups to cool for a few minutes before removing them from the muffin cups.
- Serve warm and enjoy!
