  • 2 eggs, beaten
  • 1 cup of cooked white rice
  • 1 cup of cooked black beans
  • 1 cup of marinara sauce
  • 1 cup of shredded mozzarella cheese

Instructions

  • Preheat the oven to 375 degrees F. Grease a baking dish with olive oil.
  • In a shallow dish, combine 1 cup of breadcrumbs, 1/2 cup of grated parmesan cheese, 1 teaspoon of dried oregano, 1 teaspoon of garlic powder, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
  • Dip each chicken breast into the beaten eggs, then coat with the breadcrumb mixture. Place the coated chicken breasts in the prepared baking dish.
  • Bake the chicken in the preheated oven for 25 minutes.
  • In a saucepan, heat the marinara sauce over medium heat until warmed through.
  • In a separate saucepan, combine the cooked white rice and black beans. Heat over low heat until warmed.
  • Once the chicken is cooked through, spoon the marinara sauce over each chicken breast and sprinkle with shredded mozzarella cheese.
  • Return the chicken to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
