  • In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and black pepper to make the dressing.
  • In a large bowl, combine the cooked quinoa, chopped parsley, chopped mint, cherry tomatoes, cucumber, and red onion.
  • Pour the dressing over the quinoa mixture and toss to combine.
  • Add the diced grilled chicken to the tabbouleh and gently toss to incorporate.
  • Refrigerate for at least 30 minutes before serving to allow the flavors to meld together.
