Ingredients
- 1 cup cooked quinoa
- 1/2 cup grated zucchini
- 1/4 cup finely chopped onion

- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- In a large mixing bowl, combine 1 cup of cooked quinoa, 1/2 cup grated zucchini, 1/4 cup finely chopped onion, 1/4 cup grated Parmesan cheese, 1/4 cup bread crumbs, 1 egg, 1/2 teaspoon garlic powder, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
- Mix the ingredients until well combined and form the mixture into 6 equal-sized patties.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat.
- Carefully place the quinoa patties into the skillet and cook for 3-4 minutes on each side, or until golden brown and crispy.
- Remove the quinoa cakes from the skillet and place them on a paper towel to drain any excess oil.
