  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  • Rinse the quinoa under cold water using a fine-mesh strainer.
  • In a medium saucepan, bring 2 cups of water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes, or until all the water is absorbed. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork.
  • In a large skillet, heat a tablespoon of oil over medium heat. Add the diced red bell pepper and red onion, and cook for 5 minutes, or until softened.
  • Add the black beans, corn, cumin, and chili powder to the skillet. Cook for an additional 3-4 minutes, stirring occasionally.
  • In a large bowl, combine the cooked quinoa, black bean mixture, chopped cilantro, and lime juice. Season with salt and pepper to taste.
  • Divide the quinoa mixture into bowls. Top with sliced avocado, salsa, and a dollop of sour cream.
  • Serve immediately and enjoy!
