  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  • Rinse the quinoa under cold water using a fine-mesh strainer.
  • In a medium saucepan, bring 2 cups of water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until all the water is absorbed. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork and let it cool to room temperature.
  • In a small bowl, whisk together the lime juice, olive oil, cumin, salt, and pepper to make the dressing.
  • In a large mixing bowl, combine the cooked quinoa, black beans, diced avocados, cherry tomatoes, red onion, and cilantro. Pour the dressing over the mixture and gently toss to combine.
  • Divide the quinoa avocado mixture into serving bowls and enjoy!
