Quinoa Avocado Bowl

Ingredients
- 1 cup quinoa
- 2 cups water
- 1 can (15 oz) black beans, drained and rinsed
- 2 ripe avocados, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup lime juice
- 2 tablespoons olive oil
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water using a fine-mesh strainer.
- In a medium saucepan, bring 2 cups of water to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until all the water is absorbed. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork and let it cool to room temperature.
- In a small bowl, whisk together the lime juice, olive oil, cumin, salt, and pepper to make the dressing.
- In a large mixing bowl, combine the cooked quinoa, black beans, diced avocados, cherry tomatoes, red onion, and cilantro. Pour the dressing over the mixture and gently toss to combine.
- Divide the quinoa avocado mixture into serving bowls and enjoy!
