Ingredients
- 1 tablespoon of vegetable oil
- 1/2 cup of diced onion
- 1/2 cup of diced bell pepper
- 1 jalapeno, seeded and diced
- 2 cups of shredded cheese (such as Chihuahua, Oaxaca, or Monterey Jack)
- 1/4 cup of chopped fresh cilantro
- 1/4 cup of chopped fresh tomatoes
- Tortilla chips, for serving
Instructions
- Preheat the oven to 375 degrees F.
- In a large skillet, heat 1 tablespoon of vegetable oil over medium heat.
- Add 1/2 cup of diced onion, 1/2 cup of diced bell pepper, and 1 diced jalapeno to the skillet. Cook for 3-4 minutes, or until the vegetables are softened.
- Sprinkle 2 cups of shredded cheese evenly over the vegetables in the skillet.
- Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the cheese is melted and bubbly.
- Remove the skillet from the oven and sprinkle 1/4 cup of chopped fresh cilantro and 1/4 cup of chopped fresh tomatoes over the melted cheese.
- Serve the queso fundido immediately with tortilla chips for dipping.
