Instructions

  • Preheat the oven to 375 degrees F.
  • In a large skillet, heat 1 tablespoon of vegetable oil over medium heat.
  • Add 1/2 cup of diced onion, 1/2 cup of diced bell pepper, and 1 diced jalapeno to the skillet. Cook for 3-4 minutes, or until the vegetables are softened.
  • Sprinkle 2 cups of shredded cheese evenly over the vegetables in the skillet.
  • Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the cheese is melted and bubbly.
  • Remove the skillet from the oven and sprinkle 1/4 cup of chopped fresh cilantro and 1/4 cup of chopped fresh tomatoes over the melted cheese.
  • Serve the queso fundido immediately with tortilla chips for dipping.
