  • 1 lb Oaxaca cheese, shredded
  • 1/2 cup Mexican crema or sour cream
  • 1/4 cup chopped fresh cilantro, for garnish
  • Warm corn or flour tortillas, for serving

Instructions

  • In a large skillet, cook 1 lb of chorizo sausage over medium heat, breaking it up with a spoon, until browned and cooked through, about 8-10 minutes.
  • Add 1 small diced onion, 2 minced garlic cloves, 1 diced jalapeno, and 1 diced red bell pepper to the skillet with the chorizo. Cook for an additional 5 minutes, until the vegetables are softened.
  • Preheat the broiler in your oven.
  • Transfer the cooked chorizo and vegetable mixture to a heatproof baking dish or cast-iron skillet.
  • Sprinkle 1 lb of shredded Oaxaca cheese over the top of the chorizo mixture.
  • Drizzle 1/2 cup of Mexican crema or sour cream over the cheese.
  • Place the baking dish or skillet under the broiler for 3-5 minutes, until the cheese is melted and bubbly.
  • Remove from the oven and sprinkle with 1/4 cup of chopped fresh cilantro.
  • Serve immediately with warm corn or flour tortillas for dipping.
