Ingredients
- 1 lb beef shank
- 1 lb chicken thighs
- 1 lb Spanish chorizo
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tomatoes, diced
- 2 carrots, chopped
- 2 potatoes, peeled and cubed
- 1 can chickpeas, drained and rinsed
- 1/2 head of cabbage, chopped
- 1 bay leaf
- 1 tsp paprika
- 1 tsp cumin
- 8 cups chicken broth
- Salt and pepper to taste
Instructions
- In a large pot, heat some olive oil over medium heat.
- Add the chopped onion and minced garlic, and sauté until fragrant.
- Add the beef shank, chicken thighs, and Spanish chorizo to the pot, and brown on all sides.
- Stir in the diced tomatoes, carrots, potatoes, chickpeas, and chopped cabbage.
- Season with paprika, cumin, salt, and pepper, and add the bay leaf.
- Pour in the chicken broth and bring the mixture to a boil.
- Reduce the heat to low, cover the pot, and simmer for about 1.5 to 2 hours, or until the meat is tender and the flavors have melded together.
- Remove the bay leaf and skim off any excess fat from the surface of the stew.
- Serve the Puchero hot in bowls, and enjoy!
