Instructions

  • Add the flour and mix until the dough comes together. Turn the dough out onto a floured surface and knead for about 5 minutes until smooth and elastic.
  • Place the dough in a greased bowl, cover with a clean towel, and let it rise in a warm place for 1 hour, or until doubled in size.
  • Preheat the oven to 450°F (230°C) and line a baking sheet with parchment paper.
  • Punch down the dough and divide it into 8 equal pieces. Roll each piece into a long rope, about 20 inches long. Flatten each rope and place a generous amount of shredded cheddar cheese in the center. Fold the dough over the cheese and pinch the edges to seal.
  • In a large pot, bring 10 cups of water and the baking soda to a rolling boil. Boil each pretzel for 30 seconds, then place them on the prepared baking sheet.
  • Brush each pretzel with the beaten egg and sprinkle with coarse sea salt.
  • Bake for 12-14 minutes, or until the pretzels are golden brown and the cheese is melted.
