Homemade Soft Pretzels

Ingredients
- 1 1/2 cups warm water
- 1 tablespoon sugar
- 2 teaspoons salt
- 1 package active dry yeast
- 4 1/2 cups all-purpose flour
- 4 cups water
- 1/4 cup baking soda
- 1 egg, beaten
- Coarse salt for topping
Instructions
- In a large mixing bowl, combine 1 1/2 cups warm water, 1 tablespoon sugar, and 2 teaspoons salt. Sprinkle in the yeast and let it sit for 5 minutes until it becomes foamy.
- Add the flour and mix until the dough comes together. Turn the dough out onto a floured surface and knead for about 5 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover with a clean towel, and let it rise in a warm place for 1 hour, or until doubled in size.
- Preheat the oven to 450°F (230°C). Line a baking sheet with parchment paper and set aside.
- In a large pot, bring 4 cups of water to a boil. Add the baking soda and reduce the heat to a simmer.
- Divide the dough into 8 equal pieces. Roll each piece into a long rope and shape into a pretzel. Dip each pretzel into the simmering water for 30 seconds, then place on the prepared baking sheet.
- Brush each pretzel with the beaten egg and sprinkle with coarse salt.
- Bake for 8-10 minutes, or until golden brown.
