Pretzel Dogs

Ingredients
- 1 1/2 cups warm water
- 1 tablespoon sugar
- 2 teaspoons kosher salt
- 1 package active dry yeast
- 4 1/2 cups all-purpose flour
- 1/4 cup unsalted butter, melted
- Vegetable oil
- 10 cups water
- 2/3 cup baking soda
- 8 hot dogs
- 1 large egg yolk beaten with 1 tablespoon water
- Pretzel salt or coarse sea salt
Instructions
- In a stand mixer, combine 1 1/2 cups warm water, 1 tablespoon sugar, and 2 teaspoons kosher salt. Sprinkle 1 package of active dry yeast on top and let it sit for 5 minutes, until it begins to foam.
- Add 4 1/2 cups of all-purpose flour and 1/4 cup melted unsalted butter to the yeast mixture. Using the dough hook attachment, mix on low speed until the dough comes together. Increase the speed to medium and knead for about 4-5 minutes, until the dough is smooth and pulls away from the side of the bowl.
- Remove the dough from the mixer and place it in a clean, oiled bowl. Cover with a clean towel and let it rest in a warm place for about 50-55 minutes, until the dough has doubled in size.
- Preheat the oven to 450°F. Line a baking sheet with parchment paper and lightly brush with vegetable oil.
- In a large pot, bring 10 cups of water and 2/3 cup of baking soda to a rolling boil.
- While the water is boiling, divide the dough into 8 equal pieces. Roll each piece into a long rope, then wrap it around a hot dog, pinching the ends to seal. Place the wrapped hot dogs on the prepared baking sheet.
- Carefully place the wrapped hot dogs, 2 at a time, into the boiling water for 30 seconds. Remove them with a slotted spoon and return them to the baking sheet.
- Brush the tops of the pretzel-wrapped hot dogs with the egg wash and sprinkle with pretzel salt or coarse sea salt.
- Bake in the preheated oven for 12-14 minutes, until the pretzel dough is golden brown.
- Allow the pretzel dogs to cool for a few minutes before serving. Enjoy!
