Ingredients
- 1 1/2 cups warm water
- 1 tablespoon granulated sugar
- 2 teaspoons kosher salt
- 1 package (2 1/4 teaspoons) active dry yeast
- 4 1/2 cups all-purpose flour
- 1/4 cup unsalted butter, melted
- 10 cups water
- 2/3 cup baking soda
- 8 hot dogs, cut into 3-inch pieces
- 2 cups cheddar cheese, shredded
- 1 egg yolk beaten with 1 tablespoon water
- Pretzel salt or coarse sea salt, for sprinkling
Instructions
- In a stand mixer bowl, combine 1 1/2 cups warm water, 1 tablespoon sugar, and 2 teaspoons kosher salt. Sprinkle 1 package of active dry yeast on top and let it sit for 5 minutes, until the mixture begins to foam.
- Using the dough hook attachment, mix in 4 1/2 cups of flour and 1/4 cup melted butter on low speed until the dough comes together. Increase the speed to medium and knead for about 4-5 minutes, until the dough is smooth and pulls away from the sides of the bowl.
