Instructions

  • In a large skillet, heat 1 tablespoon of olive oil over medium heat.
  • Add the diced potatoes to the skillet and cook for 8-10 minutes, stirring occasionally, until they are golden and tender. Remove the potatoes from the skillet and set aside.
  • In the same skillet, add the remaining 1 tablespoon of olive oil and cook the sausage, breaking it up with a spoon, for 5-6 minutes until browned and cooked through.
  • Add the diced onion, bell pepper, and minced garlic to the skillet with the sausage. Cook for 3-4 minutes until the vegetables are softened.
  • Return the cooked potatoes to the skillet and sprinkle the paprika, salt, and black pepper over the mixture. Stir to combine and cook for an additional 2-3 minutes.
  • In a separate non-stick skillet, fry the eggs to your desired doneness.
  • Divide the potato and sausage mixture among 4 plates, and top each with a fried egg. Sprinkle with chopped fresh parsley and serve hot.
