Ingredients
- 4 large leeks, white and light green parts only, thinly sliced
- 3 tablespoons unsalted butter
- 4 large potatoes, peeled and diced
- 6 cups chicken or vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
- 1/2 cup sour cream
Instructions
- In a large pot, melt 3 tablespoons of unsalted butter over medium heat.
- Add the sliced leeks and cook, stirring occasionally, until softened, about 5 minutes.
- Add the diced potatoes and chicken or vegetable broth to the pot.
- Bring the mixture to a boil, then reduce the heat to low and simmer for 30 minutes, or until the potatoes are very tender.
- Using an immersion blender, puree the soup until smooth. Alternatively, transfer the soup in batches to a blender and puree until smooth, then return to the pot.
