Instructions

  • In a large bowl, whisk together 6 large eggs, 1/2 cup milk, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Set aside.
  • In a 10-inch non-stick skillet, heat 1 tablespoon of olive oil over medium heat. Add 1/2 pound of Italian sausage and cook, breaking it up with a spoon, until browned and cooked through, about 5 minutes.
  • Add 2 cups of diced potatoes to the skillet with the sausage and cook, stirring occasionally, until the potatoes are golden and tender, about 8 minutes.
  • Stir in 1/2 cup of diced onion and 1/2 cup of diced bell pepper, and cook for an additional 3 minutes until the vegetables are softened.
  • Pour the egg mixture over the sausage and potatoes in the skillet. Sprinkle 1 cup of shredded cheddar cheese on top. Cook, without stirring, for 4-5 minutes, until the edges are set.
  • Preheat the broiler. Place the skillet under the broiler and broil for 3-4 minutes, until the top is set and golden brown.
  • Sprinkle with 2 tablespoons of chopped fresh parsley. Let the frittata cool for a few minutes, then slice and serve.
