Ingredients
- 6 large eggs
- 1/2 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1/2 pound Italian sausage, casings removed
- 2 cups diced potatoes

- 1/2 cup diced bell pepper
- 1 cup shredded cheddar cheese
- 2 tablespoons chopped fresh parsley
Instructions
- In a large bowl, whisk together 6 large eggs, 1/2 cup milk, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Set aside.
- In a 10-inch non-stick skillet, heat 1 tablespoon of olive oil over medium heat. Add 1/2 pound of Italian sausage and cook, breaking it up with a spoon, until browned and cooked through, about 5 minutes.

- Pour the egg mixture over the sausage and potatoes in the skillet. Sprinkle 1 cup of shredded cheddar cheese on top. Cook, without stirring, for 4-5 minutes, until the edges are set.
