Ingredients
- 4 pork cutlets, thinly sliced
- 1/2 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1/2 cup chicken broth
- 1/4 cup fresh lemon juice
- 1/4 cup capers
- 2 tablespoons unsalted butter
- 2 tablespoons chopped fresh parsley
Instructions
- Place the pork cutlets between two sheets of plastic wrap and pound them to 1/4-inch thickness using a meat mallet or rolling pin.
- In a shallow dish, combine 1/2 cup of flour, 1 teaspoon of salt, and 1/2 teaspoon of black pepper. Dredge the pork cutlets in the seasoned flour, shaking off any excess.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the pork cutlets and cook for 3-4 minutes on each side, or until golden brown and cooked through. Remove the pork from the skillet and set aside.
- In the same skillet, add 1/2 cup of chicken broth, 1/4 cup of fresh lemon juice, and 1/4 cup of capers. Bring the mixture to a simmer, scraping up any browned bits from the bottom of the skillet.
- Stir in 2 tablespoons of unsalted butter until melted and the sauce has slightly thickened. Return the pork cutlets to the skillet, turning to coat in the sauce.
