Ingredients
- 1 pound pork tenderloin, thinly sliced
- 1 tablespoon olive oil
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced

- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh cilantro
- 1 head of iceberg lettuce, leaves separated
- 1 avocado, sliced
- 1 lime, cut into wedges
Instructions
- In a large skillet, heat the olive oil over medium-high heat.
- Add the pork slices and cook for 3-4 minutes until browned and cooked through. Remove from the skillet and set aside.
- In the same skillet, add the bell peppers, onion, and garlic. Cook for 5-6 minutes until the vegetables are tender.
- Add the chili powder, cumin, paprika, salt, and black pepper to the skillet. Stir to combine with the vegetables.
- Return the cooked pork to the skillet and toss to combine with the vegetables and spices. Cook for an additional 2-3 minutes to heat through.
- Remove the skillet from the heat and stir in the chopped cilantro.
- To assemble the lettuce wraps, place a spoonful of the pork and vegetable mixture onto a lettuce leaf. Top with a few slices of avocado and a squeeze of lime juice.
