Slow-Cooked Pork Bone Soup

Ingredients
- 3 lbs pork bones
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 tsp salt
- 1/2 tsp black pepper
- 8 cups water
- 2 bay leaves
- 1 tbsp soy sauce
- 1 tbsp fish sauce
- 1 tbsp rice vinegar
- 1 tsp sugar
- 2 green onions, sliced (for garnish)
- 1 tbsp chopped cilantro (for garnish)
Instructions
- Place the pork bones in a large pot and cover with water. Bring to a boil, then reduce heat and simmer for 10 minutes. Drain and rinse the bones under cold water.
- In a slow cooker, combine the pork bones, onion, garlic, carrots, celery, salt, black pepper, water, bay leaves, soy sauce, fish sauce, rice vinegar, and sugar.
- Cover and cook on low for 6 hours, or until the pork bones are tender and the broth is flavorful.
- Remove the pork bones from the slow cooker and shred the meat. Discard the bones and return the meat to the soup.
- Taste and adjust seasoning if necessary. Serve the soup hot, garnished with sliced green onions and chopped cilantro.
