Ingredients
- 2 lbs pork belly, cut into 1-inch cubes
- 1/2 cup soy sauce
- 1/4 cup white vinegar
- 1 cup water
- 1 head garlic, minced
- 1 onion, chopped
- 3-4 pieces dried bay leaves
- 1 teaspoon whole peppercorns
- 2 tablespoons brown sugar
- 2 tablespoons chili flakes
- 3 tablespoons cooking oil
Instructions
- In a large bowl, combine the pork belly, soy sauce, vinegar, water, garlic, onion, bay leaves, and whole peppercorns. Marinate for at least 30 minutes.
- Heat the cooking oil in a large pot over medium heat. Add the marinated pork belly and cook until browned, about 5-7 minutes.
- Pour in the marinade and bring to a boil. Reduce heat to low, cover, and simmer for 30 minutes.
- Stir in the brown sugar and chili flakes. Continue to simmer, uncovered, for an additional 15 minutes or until the pork belly is tender and the sauce has thickened.
- Taste and adjust seasoning if needed. Serve hot with steamed rice.
