Ingredients
- 2 lbs pork belly, cut into 1-inch cubes
- 1 cup coconut milk
- 1/2 cup soy sauce
- 1/4 cup white vinegar
- 1 head garlic, minced
- 1 onion, sliced
- 3 bay leaves
- 1 teaspoon whole peppercorns
- 1 tablespoon brown sugar
- 1 tablespoon cooking oil
Instructions
- In a large bowl, combine the pork belly, soy sauce, vinegar, garlic, onion, bay leaves, and peppercorns. Marinate for at least 30 minutes.
- In a large pot or Dutch oven, heat the cooking oil over medium-high heat. Add the marinated pork belly and cook until browned, about 5 minutes.
- Pour in the coconut milk and add the brown sugar. Bring to a boil, then reduce heat to low and simmer for 45 minutes, stirring occasionally.
- After 45 minutes, remove the lid and continue to simmer for another 15 minutes to thicken the sauce.
- Taste and adjust seasoning if needed. Serve hot with steamed rice and enjoy!
